Manufacturing companies add corn syrup, flour, molasses, glucose, starch, dextrose and other similar products. Thus pure honey must be free from all of these, but it is practically impossible to say whether honey is pure or not just by looking at the appearance.

Commercial invert sugar is added to honey for adulteration and it can be checked with the help of Fiehe test. One needs to add 5 ml of ether to equal amount of honey to be tested and shake the mixture well. After that one has to remove the ether and let the remaining mixture evaporate at room temperature. To this one has to add 3 ml of resorcinol which completes the test. If the honey contains invert sugar then the acid layer would turn pink at first and cherry red in about 20 minutes. But this does not happen in case of pure honey .

Another addition to pure honey comes in form of glucose, which can be tested with the help of iodine test. For the iodine test the sample honey must be diluted with equal amount of water. To this a solution made of 50 ml water, 3 gm potassium and 1 gm iodine must be added. Presence of additional glucose would turn the mixture red or violet but the pure honey would remain unchanged .
Another such test is the Aniline chloride test which detects the presence of commercial sugar in honey. The compound Aniline chloride is formed when hydrochloric acid and aniline are mixed in 3:1 ratio. When this solution is added to the sample honey, the crimson red color or the orange color tells that the honey is adulterated .

An adulteration test using starch or flour can also be carried out. Starch or flour is added to honey for a simple reason, to increase the weight and whiteness of it. One can add cold water to sample honey and thus be sure whether it is free from flour and starch or not. If they are present in honey then honey falls down to the bottom of the vessel. When they are exposed to heat they obviously remain in the liquid form, but upon cooling down they turn hard .

Molasses is another impurity that is added to honey and even they can be found out. This simple test can reveal presence of molasses and help in identification of pure hone. A cotton dipped in honey when lit, burns normally. But when adulterated honey is used in place of pure honey, the cotton ball does not burn properly and gives out crackling sounds .

Another simple test for presence of sugar is conducted using water solution. In a glass of water, slowly add honey with the help of its walls. Pure honey does not dissolve easily and needs to be stirred. But the adulterated honey will dissolve without any efforts due to the presence of sugar .

One can get a blotting paper and add few drops of honey on to it. Pure honey would get absorbed by the same where as impure honey will never make through it .
